Recipe for Beef Enchiladas
I made this this weekend. It's my uncle's recipe but I'm sure he won't mind me sharing it with you. It is absolutely scrumptious....Beef Enchiladas
Ingredients:
2 lbs ground beef (turkey, venison, or other ground meat)
1 medium chopped onion
2 cans Red enchilada sauce
1 can cream of mushroom soup
1-8oz Mexican shredded cheese
1-12 count med size flour tortillas
Directions:
Saute’ onions. Brown meat and season to taste. Drain, mix onions, meat, sauce, and soup together and cook on medium heat for 10 minutes. Spoon into tortillas. Roll and place in oblong baking pan. Cover with remaining mixture and top with cheese. Bake 15-20 minutes at 350 degrees F.
Cooking Tips:
I use one hot and one mild red enchilada sauce. It gives it a spicier flavor.
